So many people just can\u2019t tolerate eggs, or for other reasons, choose not to eat them.<br \/>\nFor us, the \u2018incredible\u2019 has become completely \u2018inedible\u2019.<br \/>\nOne way to know if a food you often consume doesn\u2019t work for your body\u2014for your unique ecosystem\u2014is to remove that food from your diet for a short time. You can then reintroduce it and see how it feels (both immediately, and over time).<br \/>\nA great way to put this elimination process into practice and to stick with it is to engage in a guided detox\u2014just like my popular <em>EstroZen Detox <\/em>that I\u2019ll be telling you more about next week!<br \/>\nNow back to the eggs. I say\u2026 Can\u2019t eat \u2019em? Then beat \u2019em!<br \/>\nEnter garbanzo bean flour.<br \/>\nYou read that right: <strong>garbanzo bean flour!<\/strong><br \/>\nIt\u2019s one of my favorite flours and also my preferred way to make a great substitute for a quick omelette. Introducing the incredible edible eggless omelette\u2026<\/p>\n<h2>Eggless Omelette with Garbanzo Bean Flour<\/h2>\n<p>&nbsp;<br \/>\n<strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1\/2 cup garbanzo bean flour<\/li>\n<li>approximately 1\/3 cup water<\/li>\n<li>good size pinch sea salt<\/li>\n<li>pinch black pepper<\/li>\n<li>1 teaspoon ghee or coconut oil<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><br \/>\nPlace ghee or coconut oil in a pan over medium-low heat.<br \/>\nMeanwhile, scoop the 1\/2 cup garbanzo bean flour in a two-cup measuring cup.<br \/>\nAdd water to the measuring cup and stir with a fork until well blended. The mixture should be the consistency of slightly thick crepe batter. Add salt and pepper and beat again.<br \/>\nPour batter into heated pan with ghee or coconut oil. Cover the pan with a lid and allow to cook over medium-low heat for five to eight minutes. Check after five minutes to ensure that you are cooking the batter to your desired doneness. I like it on the softer side but want it cooked enough that I can easily \u201cflip\u201d it, fold it and remove it from the pan.<br \/>\nAfter this time, you can load half of the circular shape with your desired omelette filling. Flip over the uncovered half. And cover the pan for a minute or two more. Cooking to desired crispness.<br \/>\n<em>Voila! Remove from pan and you\u2019re ready to eat.<\/em><br \/>\nA favorite filling in our house is cabbage slaw with a vanilla tahini dressing, topped with seasonal sliced peaches, avocado, cilantro and a drizzle of tomato salsa.<br \/>\nBut really, anything goes. Think of any combination of the following:<\/p>\n<ul>\n<li>smoked salmon<\/li>\n<li>sauteed spinach<\/li>\n<li>sauteed mushrooms<\/li>\n<li>roasted red peppers<\/li>\n<li>cooked onions<\/li>\n<li>bacon<\/li>\n<li>avocado<\/li>\n<li>asparagus<\/li>\n<li>tomatoes<\/li>\n<li>cooked apples or pears<\/li>\n<li>pesto<\/li>\n<li>roasted veggies<\/li>\n<li>or wrap this baby around your favorite sausage and eat with a side of kraut<\/li>\n<\/ul>\n<p>The possibilities are simple and endless\u2026<br \/>\nLike I said, quick-and-easy weeknight meal! (And eggless to boot.)<br \/>\nGarbanzo flour is low-glycemic and packed with protein. I\u2019m guessing you want to know where to get some!<br \/>\nI get mine in bulk at my favorite co-op.
